Primal Shepherd’s Pie – with Cauliflower

My mom was in town last month, so we recorded a cooking video! I hope to do more of these in the future. I think I’m getting better at editing and lighting since the first video… what do you think?

Ingredients:
1 head cauliflower
2 tablespoons butter
1-3 tablespoons cream (optional)
salt & pepper taste

3 tablespoons olive oil
1 medium onion, chopped
1 cup frozen organic peas & carrots, thawed
3/4 cup frozen organic green beans, thawed
1 pound ground grass-fed beef or bison
1 tablespoon coconut flour or almond flour
3/4 cup beef stock or broth
1 tablespoon chopped fresh thyme or 1 teaspoon dried
1 tablespoon chopped fresh rosemary or 1 teaspoon dried
2 tablespoons butter

    I was going great for a while when I first started at the beginning of the year. Lost 30 lbs really quickly and felt awesome. Lately I’ve been lazy about following paleo/primal. I haven’t been to the grocery store as often, which means going out to eat and probably making bad decisions (I’m weak). I plan to get back into the groove soon, since when I do, I feel amazing and the weight falls off.

    Bummer! What about all the Paleo staples you keep in the fridge (ie taco meat)? You’ve got to keep up the discipline if you’re going to keep up the blog!

    My husband makes a paleo Shepherds pie and we use sweet potatoes on top and he puts bacon with the meat. Definitely one of my favorite dishes and I would really like to try the cauliflower on top
